For the past few months I've purchased protein energy balls from my gym as a source of fuel between my morning training session and my JoyRide class. These bites look small but don't let that fool you, they're dense and will hold me over until I can eat a proper meal after my class.
I got the bright idea of making my own so I found a recipe online for "No Bake Cranberry Coconut Energy Bites"---these little guys are vegan, gluten & dairy free. There are only seven ingredients that I easily found at HEB so you really can't mess them up! ;)
It took me about 15 minutes to prep the ingredients and another 15 minutes to form the balls. My favorite part is that I didn't have to bake them, all I did was put them in the freezer for 30 minutes and they were good to go!
Each ball contains 117 calories and 3 grams of protein, i told you they're dense! I wouldn't pop these daily as a snack but they are a great pre/post workout source of energy.
